Do not place another hen in the cage. That would mean war! A canary hen can raise the chicks by herself without the help of a male. Do you know why the original male died? If there is any chance that it was due to a communicable disease, don't bring a new bird in until all threat of contagion is past. What I suggest is to let the hen raise the babies by herself for about two weeks. At that point, introduce the new male. It's very likely that they will immediately mate. If he does not bother the chicks, then you can leave him in the cage with the hen. Remove him if there is any trouble.
