As you've found, a single hen canary (and other birds, too) can produce eggs.

Of course these eggs will not hatch.

If the hen attempts to sit on the egg or eggs, it's best to let her do so. This will help prevent continuous egg-laying. Producing one egg after another will ruin the bird's health.

Whenever a a bird produces eggs, it's very important that the bird's nutrition is completely up to par. Make sure that there's a good source of vitamins and minerals -- particularly calcium. Grit and cuttlefish bones are good sources of calcium.
